What! Leftover bubbly from New Year's Eve? Crazy as that may sound, it can happen. You may buy Champagne, Prosecco, or some other sparkling wine in the spirit of the season. But after the midnight toast and the obligation of fizzy festivities have been met, if you find you still have bubbly in the bottle here's a mimosa you can enjoy with the leftover Prosecco or Champagne!
For sweetener in this mimosa I used the Dolce wine, which is slightly evervescent and sweet with strawberry and raspberry notes. If you want it to be sweeter, add a little powdered sugar or honey to taste in the muddling process.
Ingredients
16 fresh raspberries (plus a few more to garnish each glass)
8 sprigs fresh thyme (plus a few more for garnish)
Stella Mia Rosso Dolce wine, chilled
Stella Mia Prosecco, chilled
Directions
Muddle raspberries with thyme in a tall glass to crush fruit and meld it together with the herb. Divide mixture between 4 Champagne flutes. Fill each glass half way with wine. Stir. Top off with Prosecco. Drop a few raspberries into each glass. Then add a few thyme sprigs. Enjoy :)
