I seem to be on a pork trend lately. Might be part of my quest to create unique recipes with my apple mint herb. Or it could be because I'm in so many grocery stores doing wine and beer tastings that I take advantage of meat sales and convenience pre-cooked items like pork roasts. Then I have to come up with interesting ways to use the leftovers.
One easy solution is a sandwich. Slapping some meat and cheese together can be so boring but blending in fresh herbs, alcohol, and fruit gives each one a distinct personality.
First, the bread. I like Portuguese rolls. They're crispy on the outside, soft and fresh inside. The tender pork is smoky, offset by the apple. I chose Honeycrisp, which is the closest I can find in the stores to my favorite apple, Winesap. It's a perfect balance between tangy peel and sweet flesh.
Can't have a sandwich without cheese :) I'm using Emental Grand Cru from Switzerland. It's fruity, nutty, sweet, and kind of dry like a swiss cheese. It melts beautifully over the pork.
The sauce is a mayonnaise sour cream blend with some tropical fruity Viognier, always a great addition :)
Apple mint is regular mint diffused by Granny Smith apple and it's a natural clean sweetener.
Lengthy description but a simple, scrumptious way to use leftover pork and make lunch or dinner more exciting! Each bite you get crunch from the roll, moist pork, melty cheese, crisp apple, and cool refreshing sauce. YUM :)
Ingredients For Sauce
1 tablespoon mayonnaise
1/2 teaspoon mustard
2 tablespoons sour cream
1/2 tablespoon white wine (I used Viognier but you can use another dry wine)
1/8 teaspoon red pepper flakes
pinch of salt
2 tablespoons apple mint, chopped fine
Ingredients For Sandwich
1 Portuguese roll
2 to 3 slices of smoked pork tenderloin
6 slices of Emental Grand Cru cheese
1/2 of small Honey Crisp apple, chopped thin
Directions For Sauce
Whisk all of the ingredients together. Set aside.
Directions For Sandwich
Heat oven to 350 degrees. Put roll onto a small baking sheet. Layer pork slices onto each side of roll. Top one side with the cheese slices. Place in the oven and heat until the cheese is melted and the roll is warm and crunchy. Remove from oven and arrange apple slices over cheese. Spoon sauce onto apples. Press the top down until the sauce just begins to drip down the sides. Grab some extra napkins and indulge!
