I don't find that coconut milk alone offers enough flavor but combined with the yogurt, the coconut really shines.

Ingredients For Shrimp Fajitas
1 lb shrimp
juice from 1 lime
1 cup champagne
2 tablespoons olive oil
1 tablespoon coconut oil
½ cup green bell pepper
½ cup yellow bell pepper
½ of Jalepeno or Fresno pepper
1/2 red onion
salt and pepper to taste
1/8 cup champagne
¼ cup coconut milk
1 tablespoon fresh lime mint
4 - 8 inch flour tortillas
Directions For Shrimp Fajitas
Add shrimp and next three ingredients into a Ziploc bag. Marinate for 30 minutes.
Heat coconut oil in a skillet over medium heat. Saute bell peppers, hot peppers, and onions along with salt and pepper, for a couple of minutes. Toss in shrimp and cook until the vegetables are softened but still slightly crisp and the shrimp are starting to turn pink. Pour in champagne. Cook for 2 to 3 more minutes so it cooks off a bit. Add coconut milk and mint. Heat through.
Warm tortillas for 10 to 12 seconds in the microwave. Distribute shrimp and veggies evenly between tortillas. Top with coconut curry cream. Enjoy!
Ingredients For Coconut Curry Cream
¼ cup coconut milk
1/3 cup coconut cream pie yogurt
½ cup sour cream
¼ teaspoon curry powder
pinch of salt and pepper
3 splashes of lime juice
Directions For Coconut Curry Cream
Mix everything together in a bowl. Refrigerate until fajitas are ready.
