Peaches are at their peak right now with a firm, juicy, and oh so sweet texture. I had made this cinnamon basil simple syrup to sweeten a peach vinaigrette and I had some left so I thought, what else could I do with the juicy summer peach. Of course my mind went to the glass and cocktail hour :)
Also happened to have an open bottle of Loosen Bros Riesling, which is slightly sweet and has wonderful peach notes. Summer peaches are delicious with the caramel rich tones of Amaretto. And the cinnamon basil really completes it.
This is the first year I've grown cinnamon basil. I have six basil varieties and I love the way each one offers a unique flavor to sweet, savory, and spirited fare. Once you heat this basil the cinnamon really emerges.

Ingredients For Cinnamon Basil And Amaretto Peach Martini
1 small peach
1/2 ounce Amaretto
2 ounces Loosen Bros Riesling
1/2 ounce cinnamon basil simple syrup (recipe follows)
Directions For Cinnamon Basil And Amaretto Peach Martini
Puree peach in the blender (holding back one slice for a garnish)
Add rest of ingredients into a cocktail shaker wih ice. Pour peach puree in and shake for about 15 seconds. Pour in a glass, garnish, and enjoy!
Cinnamon Basil Simple Syrup
Bring equal parts of granulated sugar and water to a boil until sugar dissolves. Remove from heat and add fresh herbs. Allow to completely cool. Store leftovers in a sealed container in the refrigerator for up to one month.
