Here’s an idea for taking fresh raspberries beyond the yogurt and cereal bowl and into cocktail hour and the main course!
Not only is this chicken dish sweet, flavorful, and healthy…it also makes a colorful presentation! The mint and honey balance the tangy raspberries and bubbly in the cocktail. And the chicken is covered in this bright sticky glaze. Yum! Fancy enough for a dinner party, simple enough for an everyday meal!
Chicken With A Raspberry Champagne Glaze
Ingredients
For Glaze
1 C fresh raspberries
2 Tbsp. honey
1 tsp. raspberry vinegar
1/4 C Champagne
3 boneless chicken thighs
salt and pepper
2 Tbsp olive oil
Directions
Add raspberries, honey, and vinegar into a small saucepan. Bring to a boil. Then turn heat down to medium low, add champagne, and simmer until it thickens, approximately 20 to 30 minutes. Keep warm.
When you get ready to baste your chicken pour out about ¾ of the glaze and keep the rest warm to baste onto the meat right before serving.
Salt and pepper both sides of chicken. Heat a skillet over medium high heat. Heat oil. Brown chicken on both sides.
Heat oven to 375 degrees. Brush 1/2 of the glaze over meat and bake 10 to 15 minutes. Baste with the rest of the glaze and bake for approximately another 10 to 15 minutes until the chicken is no longer pink and registers 165 degrees with a meat thermometer.
Brush with glaze right before serving.
This goes great with rice and brussel sprouts, broccoli, asparagus, peas, or whatever your favorite vegetable side is!

Raspberry Champagne Mint Cocktail
Ingredients
11 fresh raspberries (plus 8 more for a garnish)
1 tsp. honey
4 mint leaves (plus 8 more for garnish)
1/2 C champagne
Directions
Muddle first 3 ingredients in a glass until you release as much liquid as possible. Strain and pour liquid into a tall flute. Top off with champagne, allowing enough room in the glass to drop in fresh raspberries. Garnish with mint leaves.
