Succulent Shrimp Pasta And Peas With Mushrooms And Fresh Herbs
Ingredients
2 cups fresh May peas
1 Lb. pasta (white or wheat)
4 C. mushrooms (crimini, shitaki, and portabello)
3 C chopped onion
2 C chopped red, yellow, orange bell peppers
2 Tbsp olive oil
1/2 C white wine
1/3 C chicken stock
1 Lb large shrimp
1 Tbsp. fresh sage
1/2 tsp. dried thyme
salt and pepper to taste
1/2 C heavy cream
1/2 cup freshly grated Parmesan cheese
Directions
Blanche peas for approximately 5 to 10 minutes so they are still bright green and just tender. Set aside.
Cook pasta according to box directions.
Saute onions, peppers, and mushrooms in olive oil. Add wine to deglaze pan for about 5 to 7 minutes. Pour in chicken stock. Add shrimp. Cook approximately 5 minutes until pink. Add herbs and salt and pepper. Add cream. Then toss in pasta. Sprinkle with fresh grated parmesan cheese.
